Beef and Bean Burritos for 80

Ingredients:
5 pounds of ground beef
2 Walla Walla or Red onions, diced
2 – 30 oz cans of refried beans (Rosarita @ Cash and Carry)
2 – 5-pound bags of shredded cheddar cheese (Mexican Style Blend @ Cash and Carry)
1 – 8.5 lb. jug of salsa ( La Victoria Suprema Salsa @ Cash and Carry)
80 – 8” flour tortillas from Cash and Carry- La Burrita – 40 to a pack/2 packs (@ C and C)
1- 27 oz can of diced green chiles (Embasa diced green chiles @ C and C)
4 packs of taco seasoning
Box of 10”X12” Aluminum sheets

Directions:

  • Brown the ground beef. ( In more than one pan/pot if needed) Add the diced onions and taco seasoning once the meat is brown. 
  • Once the onions are soft, add the refried beans and the diced green chilies.
  • Set up a burrito production line. Tortilla on a foil sheet, meat mixture, cheese, picante sauce, hotel pan.
  • Build the burritos. Put two golf ball sized portions of meat mixture onto tortilla.
  • Add Cheese
  • Add spoon of Picante sauce
  • Roll up into a nice burrito in the foil sheet
  • Place rolled and foiled burrito into aluminum hotel pan
  • Repeat 79 times
